In honor of Cinco De Mayo, I had to figure out a way to eat my favorite foods, minus a billion calories lol! I love Mexican food, it's definitely one of my favorites!
Growing up my Step Mom used to make us these amazingly delicious Mexican Pizzas. They were definitely one of my favorite dinners she made. I remember watching her in the kitchen impatiently waiting for her to hurry up and finish, so I could devour them ha-ha! What I loved most about this dish, was the re-fried beans she would place of the flour tortillas as the "sauce" for the pizzas.
I decided to dedicate this to her! I remixed the recipe a little bit , by swapping out the flour tortillas with corn tortillas. I also replaced the delicious re-fried beans, with black beans (which I LOVE). This recipe is super easy and low in calories, BONUS!

What you'll need...
6 Corn Tortillas
1 can 16oz Black Beans
1 tbsp Sour Cream
1/2 cup of your favorite Tomatoes (I used an assortment) chopped
1/4 cup sliced Mushrooms
1 cup sliced assorted Bell Peppers
1/2 Red Onion sliced
3 tbsp Chopped Green Onions (Scallions)
2 tbsp (small can) Sliced Black Olives
1/3 cup 2% Shredded Cheddar Cheese
Non stick Olive Oil Spray
Cilantro
1 can 16oz Black Beans
1 tbsp Sour Cream
1/2 cup of your favorite Tomatoes (I used an assortment) chopped
1/4 cup sliced Mushrooms
1 cup sliced assorted Bell Peppers
1/2 Red Onion sliced
3 tbsp Chopped Green Onions (Scallions)
2 tbsp (small can) Sliced Black Olives
1/3 cup 2% Shredded Cheddar Cheese
Non stick Olive Oil Spray
Cilantro
Let's make it...
1. Preheat oven to 425', Drain but do not rinse black beans. Place them in a food processor until smooth. Add sour cream, process for a few seconds.
2. Lightly coat baking sheet with oil. Place tortillas on sheet.
3. Spread black bean topping on tortillas first (as if you were making a pizza)
4. Top with veggies and cheese. Bake in oven for 8-10 minutes, or until tortillas are crispy around the edges.
5. Top with cilantro.
Serve with your favorite salsa, sour cream and hot sauce for added kick!
