Strawberry Coconut Dream Smoothie Bowl


Smoothie Bowls have become quite popular, and I can see why. They are gorgeous to look at, I mean any dish worthy of an instrgram photo is right up my alley - lol. Beyond the beauty of the bowl, is the nutritional value loaded on top of the already amazing smoothie. 

So, for the past couple of months I have been very curious about the Vegan lifestyle. I really don't eat much meat, to the point that I feel I can't live without it. I cut out red meat, and only eat Chicken, Turkey and Fish. Since changing to a healthier lifestyle a majority of my food is fruits, veggies and nuts/grains. I'm lactose intolerant and can't do much dairy either. With all that I thought to myself, maybe now is a great time to test this diet out. 

For the past two weeks, I've become Vegan obsessed! I've read recipe after recipe on vegan dishes. Pinned a bunch of great Vegan meals! Girl I even watched YouTube videos on how Vegans eat, intrigued by how delish all the food looks - lol! I just want to know as much about it as I can before I dive right into it, lol. Gotta test drive the car before you buy it, right?! Gotta try on the outfit before you commit you know!? Lol, well unless it's on sale. If it's on sale you buy it regardless, because who doesn't love a good sale!!! 

Anywhooo, after all my research, and being totally sold on the idea; I decided I was going to do a Vegan diet for a week. I figure let's just do this thing! So with that said, all my recipes this week will be Vegan recipes. If you are Vegan, or have any tips please share with me. I'm all about learning more. 

I found this cool health food store about 10 minutes away from my house that sells Vegan item's, which is really exciting. I also plan to take the 40 minute drive to Whole Foods today (yes 40 minutes - which is why I never go), to get more items. 

With that said, welcome to my Vegan week. You never know this might turn into my Vegan life haha! I'm so happy to take you guys a long on this journey with me. 

Let's start the week off right with this fast easy breakfast! You can top this bowl with whatever you like, these are just my suggestions!

What you'll need...

1 1/2 Bananas 
1 cup Strawberries 
1/4 cup Coconut Milk
Ice
1/8 cup Shredded Coconut 
1/8 cup Sunflower Seeds
1/8 cup Sliced Almonds 
Chia Seeds 
1/4 cup Blueberries

*Feel free to use frozen fruit to make the smoothie. 

Let's make it...

1. Place Strawberries, half banana, Coconut milk and ice in a blender. Pluse until smooth. 

2. Pour smoothie into a bowl. Top with the remaining toppings and enjoy!

  1. You have got my FULL attention here, did you say vegan?! We mostly eat a plant based diet in my house Mon-Fri and sometimes, I just fall into a rut not knowing what else to make. This recipe is such a great idea for breakfast, I just pinned it and have every intention on making it, it looks delish and I can tell by the ingredients that my hubby will love it!   2. hey Alethea! I stopped by your blog after reading your comment :) these bowls look incredible, I've always wanted to make a smoothie bowl at home! Good luck trying out veganism–I am also not a big meat-eater, but I don't know that I could part with eggs and dairy :'(

  3. LOVE the look of this bowl, Alethea! It's givin me all those glorious "good morning" vibes and looks so summery!

    40 minutes drive to a Whole Foods - now that's COMMITMENT right there! My neighborhood store is pretty close by but when they are out of vegan ingredients I grab them online from Vitacost (if you're ever in one of those "I just CAN'T" moods where driving to the store is not an option but you want your smoothie bowl anyway).

  4. Yum! A smoothie bowl I never thought about that but it looks amazing. I knew I would try this recipe out as soon as I read coconut!

  6. Wow, good for you. My sister and a few family members of mine are vegans. I'm a vegetarian for the past 15 years (No meat but I do eat fish) and hubby since forever (well he's more of a vegan) and that's how we're raising our girls as well. Having a plant based diet is the best and healthiest lifestyle. This recipe looks absolutely delicious. I also have never thought of a smoothie bowl but gonna try this. Thanks for sharing and good luck with the vegan lifestyle. xx
