Strawberry Banana Pancakes




Happy Tuesday beauties! Since I've transitioned to a cleaner healthier diet, I have been trying out a ton of new recipes. If you don't know, I actually really enjoy cooking. I enjoy cooking everything except breakfast ha-ha. But today I really wanted pancakes, and I knew I couldn't go to Ihop and get some! So that left me with the option to starve (which wasn't going to happen) or make them! I found a fat blasting pancake recipe,and I remixed it of course as I do with any recipe I find. Ok, enough talking - here's how I made these delicious low calorie, fat blasting pancakes. I hope you enjoy them as much as I did!



What you'll need...

1 cup old fashioned rolled oats
1/2 cup low fat cottage cheese
2 egg whites
1 tspn vanilla extract
1 cup strawberries
1 banana
3 tbsp non fat vanilla greek yogurt
Coconut oil cooking spray
1/2 tspn chia seeds
Pinch of cinnamon
Handfull of your favorite berries (for topping - you can use strawberries if you like. I used raspberries)

How you make them...

1. Combine oats, cottage cheese, egg whites, vanilla, banana and 2 tbsp of Greek yogurt into food processor or blender. Blend until smooth. Slowly stir in strawberries.

2. Heat a large non stick skillet over medium heat. Coat with Coconut spray. Spoon about 2 tbsp of batter per pancake into pan. Cook 3 minutes, or until tops are filled with bubbles and edges look cooked. Carefully flip pancake over, cook until golden brown.

3. Top pancakes with remaining Greek yogurt, chia seeds, berries and cinnamon.
