Teriyaki Glazed Sweet Potato Rice Bowl



I'm back at it again with yet another bowl recipe! I think I'm a little obsessed with meals that can fit into a bowl. I just love the way they look, and I enjoy the fact that everything you need is right there in the bowl just waiting for you to devour it! Did I mention they are pretty!?

Cooking has replaced my passion for caking my face. Seeing my creativity shine through my food feels just as good as apply Becca's "Topaz" to my cheekbones to complete my look! Yes girl, I just compared food and a highlighter! Haha!

Lately I haven't been wearing makeup! (GASP) Say what!? Yes, I know hard to believe right! It just doesn't really fit into my current lifestyle. Honestly it feels good to give my face a little break. I usually am always working out! There is no way I'm going to beat this face to the high heavens just to turn around and take it off! Uh uh girl, don't nobody got time for that!

Low key though, I have to wash my makeup brushes. I know I always stress cleaning your makeup brushes is right up there with Godliness and all that jazz! Don't judge, you know you been there. So they have been sitting in a cup staring at me for weeks now! I just stare back at them like, I will replace YOU! I seriously contemplate just starting over and purchasing new ones. Then I realize I have a $50 Sephora brush in there. No way I'm tossing that gem out. I suppose I will clean them today...maybe...!

With that said, I hope you all are having a fabulous week. My Vegan week is going great. I haven't had the slightest urge to reach for meat or dairy. I even made Chicken last night for Eddie and Ri, and had no temptation what so ever to eat it! Talk about will power! I even found this amazing Vegan "cheesecake" (not like it's some secret cheesecake) by the brand Daiya. It legit taste like regular cheesecake, no joke! When you find things like that, and have fun recipes it makes a plant based diet that much easier. You don't really feel like you are missing out on anything.

Ok, enough jibber jabber. Let's get to the real reason you're here, the recipe!


Here's what you'll need...                                                        Yields 2-3 servings

Basmati brown rice
1 lg sweet potato diced into bite size pieces (skin on ok)
1 bag shelled edamame
1/2 cup sliced red peppers
1/2 cup shredded carrots
1/2 cucumber sliced
Seasame seeds
Green onions

Teriyaki Sauce (optional) you can use store brought if you'd like

1/4 cup brown sugar
1/4 cup low sodium soy sauce
1/4 cup sesame seed oil
1/4 cup sweet rice wine or rice vinegar
1/8 cup water - more if you need
3 garlic cloves minced

Whisk all ingredients together in a bowl.


Let's make it...

1. Cook rice according to heating instructions on the label. Preheat oven to 400'.

2. Coat a large baking pan with olive oil spray.

3. Mixed diced up sweet potatoes into teriyaki sauce, until fully coated. Spread out on baking sheet. Bake for 35 minutes or until fully cooked. Keep extra teriyaki sauce in bowl.

4. Place rice in bowl. Top with veggies and sweet potatoes. Top sweet potatoes with sesame seeds and green onions. Add remaining teriyaki sauce for added flavor.

  4. Ah, you had my laughing the entire time, you're too cute! It's definitely a great feeling when you give your face a break from all the cake! I can totally relate (I'm really rhyming over here, mix tape coming soon, haha) to resenting the fact that I need to wash my makeup brushes! I washed them yesterday and I was supposed to do it weeks ago, whoops! Anyway, another recipe in the bookmark! I have a few of your recipes bookmarked and pinned and this weekend, since I actually have Saturday free, first time in FOREVER, I'll be heading to the market with these recipes in tow!   5. Haha, I love when you say 'I just compared food and a highlighter and that cooking has replaced your passion for caking your face.' Seriously, too cute and funny. I really don't have that much of a passion for cooking to be honest (hubby does most of the cooking), I do cook often (2 kids and all) but I would much rather clean the house from top to bottom. That is what makes me feel relax...weird, I know. However, this looks really delicious. As a vegetarian, it wonderful to see these kinds of recipes, just yummy. Thank you for sharing Hun! :-) xx

    1. Please give me your passion for cleaning girl! My hubby doesn't cook nor clean. I am usually stuck doing it all haha! I can't cook in a dirty kitchen either, so I have to deep clean my kitchen every time I cook. Once I'm done all I want is to relax lol. The pretty colors of the food put me in a happy place.
