Hi babes! Sorry I've been such an inconsistent blogger lately. I'm trying to get into a routine, but my life is far from routine. Please bear with me as I get it together!
Well I'm finally back on my healthy kick, and hunny ain't no backies this time around, no ma'am! A huge part of me reverting back to my old ways, was lack of inspiration. I was sick of eating the same mundane crap every day. A major key (in my DJ Khaled voice) to weight loss is your diet. In order for you to see and feel those results you are looking for, you have to eat healthy. Fitness starts in the kitchen.
Recently I became inspired again, all I want to do is create yummy things in the kitchen. Being healthy doesn't have to be boring. So with that said, because I know you're like "girl will you shut up and get to the recipe already"! I will be starting a series called "In the Kitchen with Alethea", where I will share awesome healthy recipes, that will kick your unwanted fats ASS!
The best thing about these recipes, is that the whole family can enjoy them with you. My 9 year old looks forward to my meals now, and it's nice to know she's putting great things into her little body!
I told myself if I'm going to stick with this lifestyle I have to make it fun, and spice things up. That's exactly what I did with this recipe. Last night I had an extreme craving for Chinese Food. Being from New York, I don't know if that craving ever goes away. I swear New Yorkers are made out of Pizza and Chinese Food, with a nice topping of bagels lol!
Now you know Alethea is eating healthy, so this was a major dilemma. I decided to get creative and make my own version of Chicken Fried Rice. I'm so happy I did, because sister girl this was the BEST Fried Rice I've ever had! Like ever in life. So drop that take out menu and grab a pen, because this recipe is about to take your life to a whole new level.
I got fancy and decided to use Quinoa instead of Rice. Then I chopped up a bunch of veggies, and of course added chicken because I need that in my life lol. But you could totally Vegan this recipe out by taking out the chicken, if that's your preference.
Let's prep!
What you'll need...
1 cup of cooked quinoa
1 cup chopped up chicken breast
1 chopped up red onion
1/2 cup of snow peas
1/2 cup shredded carrots
1/2 cup chopped eggplant
1 cup chopped red, yellow orange peppers
1/2 cup diced mushrooms
2 egg whites
1 Tbsp Mrs. Dash Original Blend Seasoning
1Tbsp sesame oil
1 Tbsp minced garlic
1/4 cup low sodium soy sauce
1 Tbsp light brown sugar
1/8 tsp. ground ginger
Pinch red pepper flakes
2 Tbsp green onions, chopped
1 cup chopped up chicken breast

1/2 cup diced mushrooms

1/4 cup low sodium soy sauce

2 Tbsp green onions, chopped
Let's make it!
Following the directions on the package of quinoa, cook and set a side. Season your chicken. Heat a large wok (or skillet) over medium heat and drizzle in sesame oil. Add Chicken, garlic and onion, and saute until tender and chicken is cooked, about 10 minutes. Meanwhile in a small bowl, whisk together soy sauce, brown sugar, ginger and red pepper flakes; set aside. Add peas, carrots, eggplant, peppers and mushrooms to mixture. In another pan add egg whites scrambling until cooked through, and then add to mixture. Stir in quinoa and pour the soy sauce mixture over top, mixing well. Cook for an additional 3 to 4 minutes. Top with green onions, serve and enjoy!
