Rummaging through my fridge this morning, on a extremely hungry stomach - I had no clue what I was going to make for breakfast. I seriously need to go grocery shopping, but I can't do that on an empty tummy. So looking at all 5 ingredients I had left in the fridge, it was either a bowl of cereal; or do something clever with an Avocado and Eggs. I remember I saw this healthy recipe for a Baked Egg Avocado. As pretty and delish as it looked, I thought there is no way I can make that. I mean I can't even cut an Avocado in half correctly, haha! The competitive side in me took over though, and I challenged myself to try it out. Jazzing it up to my liking, I actually made it! This recipe is super easy, all you have to do is take your time and it can be done! With just a few ingredients you too can have this amazingness in your belly!
Here's what you'll need...
1 Avocado
2 small eggs
Pinch Paprika
Pinch Black ground pepper
Pinch Crushed red pepper flakes
Pinch Salt (optional)
Let's make it...
1. Pre heat oven to 425'. Cut avocado in half, remove pit.
2. Crack small egg into the center of each half, trying your best to crack the yolks first - then let the whites fill the remainder of the center.
3. Bake 15-20 minutes, or until Egg is cooked to your liking!
